Filled Sweet Potatoes With Chicken & Chorizo

These healthy and nutritious filled sweet potatoes filled with chicken and chorizo are great for lunch or light evening meal.  Sweet potatoes are a great source of vitamin A and also have antioxidant and anti-inflammatory properties.  They also help to regulate blood sugar, therefore you will not crave for sweet things.  This fully balanced and healthy dish will help to speed up your metabolism and lose weight.

 

Ingredients – serving size is for 2 people (70kg ideal bodyweight, physically active):

  • 2 medium sized sweet potatoes (400g)
  • sunflower oil
  • chicken or turkey breast (120g)
  • chorizo (70g)
  • 1 medium sized shallot (80g)
  • salt and pepper

Cooking Instructions:

  1. Preheat the oven to 180°C/350°F.
  2. Wash and scrub sweet potatoes well, cut the ends off and rub with some sunflower oil (a piece of paper towel can be used to rub the oil in).  Bake sweet potatoes in the oven for an hour, until they are soft and cooked through.  Alternatively, you can use a microwave for this (cooking time is about 5mins per potato).
  3. While sweet potatoes are baking, you can prepare the filling. Chop chorizo, chicken breast and shallot into small pieces. Place chorizo in a frying pan (do not use any cooking oil) and fry for about  2-3 mins. Chorizo will release a lot of fat, so carefully soak it up with a paper towel.
  4. Add sliced shallots and chicken into frying pan and fry for further 10 mins. Add seasoning.
  5. Remove sweet potatoes from the oven and let them cool down. When they are cool enough to handle, cut them in half (horizontally). Using a spoon, scoop out the inside part of potato leaving approximately 1/4 inch/0.6 cm of potato on the skin. Place the inside part of the potatoes in a bowl and mix with chicken, chorizo and shallot filling.
  6. Fill sweet potatoes with the prepared mixture and return to the oven. Bake for further 10-15 mins. Remove from the oven. Serve with a rocket and tomato salad. Enjoy!
